Mexicorn... how i love you

OK so in recent news I have fallen in love with an ingredient that I use on a weekly or more basis. Yes my friends, its the latest taste sensation that is sweeping the nation its, Mexicorn! I realize how silly the name sounds but believe me when I tell you that its outstanding.

Just throw a can of mexicorn(by Green Giant) into a bowl, add a can of black beans, salsa (Herdez is the best salsa I've ever had!), cheese, and make up some rice (I love some cilantro lime rice!) wrap it up in a tortilla. Throw some foil around that bad boy and toss it in the over for 20 min or so at 350+ degrees. What you will have is some tasty goodness.

I have also though of ways to work the mexicorn in with other things... add it to a salad for a nice little crisp. You could also add it to some salsa too... the possibilities are pretty endless. I wouldn't add it to ice cream or anything. I have heard of people adding it to corn bread though.

Anyway try out the mexicorn! It's also made by Kuner's but they refer to it as Corn'n'Peppers which, isn't as catchy as Mexicorn.
